Mini Apple Galettes

September is the season for apples. My family loves to go to local farms and pick fresh apples. They taste so delicious, and I always love to bake something with them. I am sharing a simple recipe that is perfect to make with kids after the first day of school. These Mini Apple Galettes are made with vanilla apple filling. If you are tired of cinnamon or want to try something new, then this recipe is for you. Mini Apple Galettes have a flaky crust, are loaded with apples, and have a vanilla bean flavor.

How to Make This Recipe
Prepare the dough. In the bowl of a food processor or Thermomix, pulse together flour, a pinch of salt, sugar, and cold butter. Add cold water and pulse again. The dough should be pea-sized and resemble wet sand. After that, shape the dough into a disk, cover it with plastic wrap, and place it in the fridge. This could be done a day ahead or a few hours. Keep dough refrigerated until use.


Make apple filling. Peel and cut apples into small cubes. In the mixing bowl, add cut apples, brown sugar, cornstarch, and vanilla bean paste. Mix with the spatula until all is combined. Then, in the frying pan, add butter and let it melt. Add apple mixture and cook over medium heat for 5-10 minutes.


Assembling galettes. Remove the dough from the fridge and place it on the parchment paper. Cut into six equal pieces. This recipe makes two big galettes or six small ones. Using a rolling pin, make a circle from each piece of dough. Circles do not have to be perfect. After that, add the apple filling to the center of the dough circle, leaving room around the edge. Gently fold the edges of the dough over the apple filling, overlapping the dough as necessary.


Egg wash. In the small bowl, whisk the egg. Using a pastry brush, eggwash the edges of each galette and sprinkle with the sugar.
Bake galettes at 375°F (190°C) for 20-25 minutes or until they are golden brown.

Expert Tips
- The dough could be made a day ahead. Keep in the fridge until use.
- Set the oven to convection baking setting. This will give galettes golden edges faster. Just make sure the bottom is also brown.
- You can make two big galettes from this recipe or six small ones.
- Apples can be substituted with pears or other fruits.
