Strawberry Galette is a delicious summer dessert. When it is season for fresh strawberries, it is time to make a galette. It is so much fun to bake with kids when they can mix different berries and make individual mini galettes.

What is Strawberry Galette?
A galette is a flat round cake of pastry topped with fresh strawberries. It is a French pastry that is similar to a tart or a pie. It is divine-served warm with a scoop of ice cream on top.
How to make this recipe
In the bowl of a food processor, pulse together flour, sugar, a pinch of salt, and cold butter. Add cold milk and pulse again. The dough should be pea-sized and resemble wet sand. Shape the dough into a disk, cover it with plastic wrap, and refrigerate for 30-45 minutes.
Tip from Marina: I usually make pie dough the night before. You can keep it in the refrigerator for up to 2 days or in the freezer for up to 6 months. It is always good to have some dough on hand. You can double or triple this dough recipe.
Combine granulated sugar and cornstarch first. Add mixture to sliced strawberries, gently mix, and set aside.
Remove the dough from the refrigerator and place it on a sheet of parchment paper. Starting at the center of the dough, roll it out with a rolling pan into a circle. This recipe makes two eight-inch galettes. Preheat oven to 375oF (190oC).
Place the parchment paper with the dough on a baking sheet. Add the filling to the center of the dough, leaving a 2-inch border. Gently fold the edges of the dough over the strawberries, overlapping the dough as necessary. Press gently to seal the edges.
Using a pastry brush, brush the crust of the galette edges with the egg yolk and sprinkle with sugar.
Bake for 25-30 min or when the dough is golden and crisp. Allow to cool on the baking sheet for 10 minutes before slicing.

- 220 gr (1 ½ cup) all-purpose flour
- 25 gr (2 Tablespoon) granulated sugar
- 30 ml (2 Tablespoon) cold milk

- 25 gr (2 Tablespoon) granulated sugar
- 15 gr (2 Tablespoon) corn starch
To assemble
- 2 egg yolk
