I have to be honest; I have never made pie before. Not long ago my husband asked me if I know how to make it. I told him that I can try.  There are some recipes that include shortening, but not this one that I am sharing today. This pie crust recipe dough is very easy to make with simple ingredients. What could be better than homemade pie?

Ingredients for Pie Crust

  • all-purpose flour
  • granulate sugar
  • kosher salt
  • cold unsalted butter diced into 1/4” pieces
  • ice cold water

How to make pie crust dough in Thermomix

Place flour, salt and sugar into Thermomix bowl, place cover on. Knead function for 10 sec. Add cold diced butter and continue same knead function for 30 sec or until butter cut into small pea-sized clumps. 

Slowly drizzle the ice water and knead more for a few sec. 

Tip from Marina: You can make the dough a day or two ahead, and keep the dough disks chilled in the refrigerator.

How to make pie crust dough in food processor

Place sugar, flour and salt into the bowl of food processor and pulse a few times to combine. Add cold diced butter and pulse again.

Press a small piece of dough between your fingers, if the mixture doesn’t hold together then add a bit more water. 

Transfer dough onto pastry mat and knead 2-3 times just to help it come together. 

Cover in plastic wrap. Place in the fridge to chill for 30 min to an hour. This pie dough recipe makes 2 single crusts or 1 double crust. Just keep this in mind before wrapping in plastic. You can divide dough into 2 piaces before refrigerating. 

How to make the perfect pie

Roll out your chilled pie dough into disk about ¼ inch thick.  Place into your pie dish.

You can cut strips from another half of your dough. I’ve used cookie cutter to decorate. This part is totally up to you how you want your pie to look.

Tip from Marina: Brush top of the pie with egg wash. Why? The egg wash gives shinny finish. Your pie will be so beautiful!

Bake pie at 350oF for about 40-50 minutes or until golden brown.

  • 226 gr (2 sticks) dices into ¼” pieces cold unsalted butter
  • 12 gr (1 Tablespoon) granulated sugar
  • 2 gr (1/4 teaspoon) kosher salt
  • 120 gr (1/2 cup) ice cold water

Instructions

  • For food processor: place sugar, flour and salt and pulse a few times to combine. Add cold diced butter and pulse agian. Add ice water and pulse again.
  • Transfer dough onto pastry mat and knead 2-3 times just to help it come together
  • Cover in plastic wrap. Place in the fridge to chill for 30 min to an hour.
  • Roll out your chilled pie dough into disk about ¼ inch thick. 
  • Place into your pie dish.
  • Add your favorite filling. 
  • Decorate.
  • Brush with the egg wash.
  • Bake at 350F for about 45-50 min or until golden brown.
