Waffle Recipe

On the weekends, I make waffles very often. Many of you are asking me to share my secret for these fluffy waffles, and I am sharing my Waffle Recipe. If you tried my Syrniki recipe, then you will love waffles too. They are rich, tender, and slightly tangy- somewhere between classic buttermilk waffles and cheese blintzes.

Ingredients

- Cheese: Farmer cheese. This is the main ingredient; do not substitute with cream cheese or cottage cheese.
- Flour: All-purpose flour. You can also use gluten-free flour.
- Sugar: White granulated sugar.
- Egg: Large egg at room temperature.
- Oil: Vegetable oil. Do not use olive oil.
- Vanilla: Vanilla extract or paste.
How to Make a Waffle Recipe
Preheat the waffle iron. Any waffle waker will work. I use a Delonghi, and it makes four waffles at a time.

In the large mixing bowl, using a fork, mix farmer’s cheese and sugar.

Add eggs and mix again. You can use a hand mixer if you like.

After that, add oil and vanilla. Mix again until all is combined.

Sift flour into the waffle batter and mix again—no need to use a spatula.

Lightly grease the waffle iron with oil if needed. Using an ice cream spoon, place about 1/3 cup of the waffle batter into the waffle iron.

Cook according to your waffle maker’s instructions until golden brown. It takes 5 minutes in my waffle maker. I set up a timer for each batch of waffles.
Remove a waffle and let it cool. Waffles may look undercooked at first, but do not worry, they taste delicious. Serve them with your favorite topping. I like to eat with no topping and cold.

Expert Tips
- Do not substitute farmer cheese with cream cheese or cottage cheese. Farmer’s cheese is my secret ingredient in this recipe.
- If your farmer cheese is very dry, add an extra 2-4 tablespoons of milk or heavy cream. If it’s very wet, add 1-2 tablespoons more flour until the batter is thick but pourable.
- Waffles may look undercooked at first, but let them cool for a few minutes.
Serving Ideas
- Fresh berries and maple syrup.
- Cream Cheese Whipped Cream, or Strawberry Buttercream.
- Sour cream with white sugar.
- Smoked salmon and fresh herbs.
- Homemade berry sauce or caramel.

Store in the refrigerator for 1-2 days. You can also freeze them for a few months and reheat them in the toaster when needed.
