How to make cake sponge

Preheat oven to 350oF (175oC). Line baking sheet with parchment paper. In the bowl of stand mixer with whisk attachment add eggs room temperature and white granulated sugar. Whip on medium speed for 5-7 minutes. Meanwhile, sift together all purpose flour and baking powder. Add flour mixture to whipped eggs. Add warm milk and vegetable oil. Whisk on low for a few seconds until all combined. Transfer batter to prepared baking sheet and level it up with the spatula. Bake at 350oF (175oC) for 12-14 minutes or until toothpick inserted into the cake comes out clean. Place on wire rock to cool completely.

How to make Strawberry Compote

Wash the strawberries and cream them with the paper towel. Remove stems and leaves, then cut in half or quarters. In the medium saucepan add strawberries, sugar and lemon juice. Cook over medium heat for 5-10 minutes. Stir strawberries as they cook and break down with the spatula if you want less large pieces. Dissolve the cornstarch and water in the small cup an pour it into strawberries. Wait until boil, stirring frequently. Remove from the heat and allow to cool. Compote will get thicker. Refrigerate until use.

How to make Cream Cheese Cream

In the bowl of stand mixer with pedal attachment and cold cream cheese and mix until cream cheese is smooth. Add powdered sugar and mix again. Change pedals attachment to whisk and add cold heavy whipping cream. Whip for a few seconds. Do not over whip! Refrigerate until use.

How to assemble Cake in a Cup

Using round cookie cutter cut out cake sponges. In the paper cup add layer cream and then place cake sponge. Then add layer of strawberry compote. Repeat with other layers until you fill the cup. When you fill cup, make sure the last layer is cream. You can decorate each cake differently or the same. You can decorate cake with:

  • sprinkles
  • fresh fruits
  • candy
  • chocolate

How to store

When you assembled and decorated Cake in a Cup, cover with the cover that came with the cup. Store in the fridge for 2-3 days. I would not recommend to freeze this dessert. It is taste much better when made fresh.

Ingredients

Cake Sponge

  • 4 eggs room temperature
  • ¾ cup white granulated sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ¼ cup milk (warm)
  • ¼ cup vegetable oil

Strawberry Compote

  • 2 cups fresh strawberries
  • 1 Tbsp lemon juice
  • 2 Tbsp white granulate sugar
  • 1 Tbsp corn starch
  • 2 Tbsp water

Cream Cheese Cream

  • 1 cup cream cheese 8oz
  • 2 cup heavy whipping cream
  • 1 cup powdered sugar

Instructions
