For Thermomix: Place flour, salt and sugar into Thermomix bowl, place cover on. Knead function for 10 sec. Add cold diced butter and continue same knead function for 30 sec or until butter cut into small pea-sized clumps.
Slowly drizzle the ice water and knead more for a few sec.
For food processor: place sugar, flour and salt and pulse a few times to combine. Add cold diced butter and pulse agian. Add ice water and pulse again.
Transfer dough onto pastry mat and knead 2-3 times just to help it come together
Cover in plastic wrap. Place in the fridge to chill for 30 min to an hour.
Roll out your chilled pie dough into disk about ¼ inch thick.
Place into your pie dish.
Add your favorite filling.
Decorate.
Brush with the egg wash.
Bake at 350F for about 45-50 min or until golden brown.
