Cranberry Orange Muffins Recipe

My family loves cranberries. I use them all the time in my baking. My favorite combination is cranberries with orange. This is just perfect for winter. Many people consider cranberries to be a superfood due to their high nutrient and antioxidant content. With orange, you get even more vitamins! I am sharing the recipe for Cranberry Orange Muffins that are simple to make. You may use fresh or frozen cranberries for this recipe.

Ingredients note
- Flour. All-purpose flour was used.
- Sugar. White granulated sugar.
- eggs room temperature
- Sour cream. You can also use greek yogurt.
- baking powder
- Vegetable oil. You can also use canola or other neutral oil.
- fresh cranberries
- orange juice
- zest of one orange
- pinch of salt
How to make this recipe
Line a muffin/cupcake tin with cupcake liners. Preheat oven to 375oF.
In a large mixing bowl beat together 2 eggs and granulated sugar. Should be thick and light in color. Add sour cream, vegetable oil, and orange juice. Mix to combine.
In a small bowl, add all-purpose flour, baking powder, and a pinch of salt. Wisk to combine.ย
Using a handheld whisk, add the flour mixture to the better. Very important here not to overmix.ย Add zest of one orange.ย Use a spatula to fold in cranberries.ย
Tip from Marina: dust cranberries with about one spoon of flour before folding into batter. This will prevent cranberries from sinking to the bottom of the muffin.
Divide batter into muffin tin filling liners. I would recommend using an ice cream spoon.
Bake at 375oF for 20 min or until tops are golden. Remove the muffins from the tin and let cool on the wire rock. Top muffins with orange glaze.
How to make orange glaze
Combine powdered sugar with orange juice and mix well. Add orange zest. Top muffins with orange glaze.
Tip from Marina: To thin the glaze more, add a little orange juice. To thicken, add a little more powdered sugar.
