Syrniki Gluten Free Recipe

What are Syrniki (or Sirniki)?  Syrniki are Ukrainian pancakes made with farmer (or homemade) cheese. They are crispy on the  outside and soft and fluffy on the inside.  Traditionally syrniki are served with sour cream. I like to serve syrniki with fresh berries and powdered sugar. This is simple recipe and  super easy way to make this delicious breakfast or dessert.

Ingredients for Syrniki (Ukrainian Cheese Pancakes)

  • farmer cheese, you can also use homemade
  • powdered sugar  (plus extra for serving)
  • egg room temperature
  • white rice flour (plus extra a few spoons for forming patty). Do not substitude rice flour with all-purpose flour or any diffrent.
  • pinch of salt
  • oil for frying

How to make Syrniki

Instructions:

Prepare the batter: In the large bowl, mix together farm cheese, egg, white rice flour, powdered sugar (sifted) and pinch of salt. I use fork for mixing.  I also like to have some little cheese clumps left when I combine all ingredients.

Tip from Marina: the “batter” will be much thicker than American pancake batter. It’s ok.

To form syrniki:

Traditionally, you will scoop out (with  help of the tablespoon) dough and form small patty, using your hands. But I would like to show you different way.

You will need ¼ cup ice cream scoop with squeeze-release handle. Simply scoop some dough and place on the table (or cutting board), previously dusted with some rice flour.

Now the fun part:  cover piece of dough with the glass or the teacup and circle a few times. Then flip that patty and circle again. Your syrnik is ready for baking! Repeat with the rest of the dough.

Heat a large non-stick skillet over medium heat, add 1-2 tbsp oil.

Once skillet and oil are hot, place patties directly into the skillet. Saute until golden brown, about 3-4 minutes each side. Do not crowd the syrniki, cook them in 3-4 batches if necessary.

How to serve Syrniki

Transfer to a plate and serve with fresh berries. Sprinkle with powdered sugar. Toppings could be jam, sour cream or maple syrup.

Tips for making Syrniki

  • Do not substitude rice flour with all-purpose flour. The result will be diffrent. This is recipe for gluten free Syrniki.
  • You can add raisins or nuts to the recipe.
  • Do not use a lot of oil in the pan.
  • Cook a few Syrniki at the time. Do not crowd the pan!

  • 50 gr (1/3 cup) powdered sugar plus extra for serving 
  • 1 egg
  • 50 gr (1/3) cup white rice flour plus extra (a few spoons) for forming patty 
  • Pinch of salt
  • Oil for frying
