Preheat the waffle iron. Any waffle waker will work.
In the large mixing bowl, using a fork, mix farmer's cheese and sugar.
Add eggs and mix again.
After that, add oil and vanilla. Mix again until all is combined.
Sift flour into the waffle batter and mix again—no need to use a spatula.
Lightly grease the waffle iron with oil if needed.
Using an ice cream spoon, place about 1/3 cup of the waffle batter into the waffle iron and cook according to your waffle maker's instructions until golden brown. It takes 5 minutes in my waffle maker. I set up a timer for each batch of waffles.
