Why Buttercream is a Popular Filling for Macarons

- Structure and Stability: American Buttercream is a stable filling for macarons. Great for making macaron towers, cubes, or other decorations with macarons.
- Flavor Versatility: Buttercream is a perfect base for many flavors, like fruits, nuts, or herbs.
Why Ganache is Not a Popular Filling for Macarons
- Stability: Chocolate Ganache is less stable at room temperature than buttercream. It can melt very fast in a warm environment. Not recommended for tower display or other macaron structures.
- Cost: Chocolate is very expensive. To make great ganache, you will need high-quality chocolate like Valrhona or Callebaut. Many bakeries choose buttercream for less cost.
- Too Sweet: Some people say that macarons with the ganache filling are too sweet and choose fruit buttercream or savory macarons.
My personal opinion is that everyone likes different fillings for macarons. Some people only want ganache, and some only want buttercream. As a baker, you will have different customers and will need to adjust the macarons menu. It all depends on the country where you live and on the customers’ preferences. I always choose filling based on the event where macarons will be served, the season, and the customers who will be eating them. If that kid’s party, avoid nuts and liquor fillings.
