Syrniki are pancakes made with farmer (or homemade) cheese. Traditionally, syrniki are served with sour cream. I like to serve syrniki with fresh berries and powdered sugar.
50gr(1/3 cup) powdered sugar plus extra for serving
1egg room temperature
50gr(1/3) cup white rice flour plus extra (a few spoons) for forming patty
2g salt
2gvanilla bean paste or vanilla extract

How to Make Syrniki (Ukrainian Cheese Pancakes)
In the large bowl, mix farm cheese, egg, white rice flour, powdered sugar (sifted), salt, and vanilla bean paste.
You will need a ¼ cup ice cream scoop with a squeeze-release handle. Simply scoop some dough and place it on the table (or cutting board), previously sprinkled with some rice flour.
Cover a piece of dough with the glass or teacup and circle a few times. Then flip that patty and circle again.
Repeat with the rest of the dough.
Heat a large skillet over medium heat, and add 1-2 tbsp oil or butter.
Once the skillet and oil are hot, place the patties directly into the skillet. Sauté until golden brown, about 3-4 minutes on each side. Do not crowd the syrniki; cook them in batches of 3-4 batches if necessary.
Transfer to a plate and serve with fresh berries. Sprinkle with powdered sugar.
Notes
Do not substitute rice flour with any other. Do not use a lot of oil in the frying pan.
