How to make this recipe
If you never made brown butter, you will be surprised how easy it is to make. In the saucepan, melt the butter over medium heat. Stir the butter occasionally. After the butter has melted, it will start to get foamy, this is normal. You can even hear some cranky noises that butter makes. It will also change the color to dark orange. You will start to see little brown speckles form at the bottom of the saucepan. This is all normal. Let the butter continue to brown for a few minutes. After that, remove the butter from the heat and transfer it into a glass bowl or container. Allow the brown butter to cool and place in the fridge until use.
Preheat the oven to 350oF. Line the baking sheet with parchment paper or baking mat. I used a Silikomart Air mat. In the mixing bowl, sift flour, baking soda, and salt. Set aside. In another mixing bowl, add brown butter and granulated sugar. Using pedal attachment, beat for 10-15 seconds or until all is incorporated. Add eggs and vanilla extract. Beat again for 15-20 seconds. Add dry ingredients and mix until well combined. The dough should be soft and not sticky. Using an ice cream scoop or cookie scoop, make a dough ball with all the dough. Roll balls in granulated sugar (optional). Place balls on the prepared baking sheet. Bake cookies for 10-12 minutes or until golden on the edges after that, allow cookies to cool on the wire rack.
Tip from Marina: use the bottom of a cup or glass to press the dough balls into flat disks.
