If you never made brown butter, you will be surprized how easy it to make. In the sauce pan melt the butter over medium heat. Stir the butter occasionally. After the butter has melted it will start to get foamy , this is normal. You can even hear some crancky noises that butter makes. It will also chanche the color to dark orange. You will start to see little brown speckles to foarm at the bottom of the saucepan. This is all normal. Let the butter continue to brown for a few minutes. After that remove butter from the heat and transfer into glass bowl or container. Allow the brown butter to cool and place in the fridge untill use.

Preheat the oven to 350 degrees Fahrenheit. Line baking sheet with parchment paper or baking mat. I used Silikomart Air mat. In the mixing bowl sift flour, baking soda and salt. Set aside. In another mixing bowl addbrown butter and granulated sugar. Using pedal attachment, beat for 10-15 seconds or untill all incorpated. Add eggs and vanilla extract. Beat again for 15-20 seconds. Add dry ingredients and mix until well combined. Dough should be soft and not sticky. Using a ice cream scoop or cookie scoop, make dough ball with all the dough. Roll balls in granulated sugar (optional). Place balls on the prepared baking sheet. Bake cookies for 10-12 minutes, or until golden on the edges. After that allow cookies to cool on the wire rack.
Tip from Marina: use the bottom of a cup or glass to press to dough balls into flat disks.
