How To Make Apple Cake
Start by preheating your oven to 350oF (175oC). Grease a 9-inch round cake pan. Peel and cut apples into cubes. Set aside.

In a mixing bowl, combine the eggs and sugar, then beat until fluffy.

Add vegetable oil and vanilla bean paste. Beat again until fully combined.

Sift flour, baking powder, and salt into the egg mixture. Mix just until combined- be careful not to overmix the batter.

Fold in the diced apples, making sure they are evenly distributed throughout the batter.

Pour the cake batter into the prepared pan and smooth the top. Bake the apple cake in the preheated oven to 350oF (175oC) for about 50 minutes or until the toothpick comes out clean.

Remove the cake from the pan and let it cool to room temperature. Dust with powdered sugar before serving.

Expert Tips
- Choose the right apples. A combination of sweet and slightly tart apples gives the cake wonderful flavor. Granny Smith, Honeycrisp, or Pink Lady apples are all great choices.
- Don’t overmix. Once the flour goes in, mix only until the ingredients are combined. This helps keep the cake soft and tender.
- Vanilla can be substituted with cinnamon. If you are a serious cinnamon lover, sprinkle a little over the top before baking.

How to Serve It
This Apple Cake is delicious on its own, but there are plenty of ways to make it extra special. Serve it slightly warm with a scoop of vanilla ice cream, a dollop of whipped cream, or a light dusting of powdered sugar. For breakfast or an afternoon treat, simply pair a slice with your favorite tea or coffee.
