These Apple Muffins with Streusel are so soft and full of apple cinnamon flavor. This recipe is very simple and no baking skills needed. You will be impressed how fast you can make these muffins. They are great for breakfast or any time of the day.

What is streusel

I personally like to use streusel in my baking because it gives some charm and mystery to dessert. Streusel is a crumbly topping of butter, sugar and flour. It is easy to make and very delicious. Streusel is baked on top of muffins, pies and cakes.

How to make streusel

Ingredients: 

All you need to do is to combine all ingredients together in the bowl and mash with fork or special baking tool (pastry blender). As you see in the picture.

Tip from Marina: Don’t use your fingers! Warmth of your fingers will soften the butter and texture of the crumb will not be the right constituency. You can use food processor. Simply combine all ingredients in the food processor and pulse until crumbly. 

 For Thermomix: combine all ingredients, put cover on and knead for 30- 40 sec ( use knead function).

You have to keep streusel in the fridge until use.

How to make Apple Muffins

Firstly, wash and dice apples. I didn’t peel apples because they were from farm and I wanted to keep texture and color. Of course, you can peel, if you like. This is really personal preference. 

Secondly, in the bowl combine dry ingredients: flour, baking powder and cinnamon powder. Then, set aside. 

Next, in the separate bowl whisk eggs with sugar until mixture is fluffy. Add vegetable oil and sour cream and mix until combine. After that, add dry ingredients and mix again. Be careful not to overmix the better! Fold in apples into the dough with the help of spatula.

Now, you need to divide the batter evenly into lined muffin or cupcake pan, filling 2/3 full. 

Tip from Marina: use ice cream scoop to divide the batter.

At the end, sprinkle streusel over muffins immediately before baking. Bake 25-30 min at 350F, or until a toothpick inserted in the center comes out clean. 

Finally, let muffins to cool in the pan for 5 minutes, then transfer to wire rack and cool to room temperature. Kids love muffins as a snack. This is also great dessert for holidays.

Ingredients

Streusel

  • 50 gr (1/4 cup) sugar
  • 50 gr (1/3 cup) all-purpose flour
  • 50 gr (3 Tablespoon +2 teaspoon) unsalted butter cold

Apple muffins

  • 3 big apples
  • 350 gr (2 3/4 cup) all-purpose flour
  • 180 gr (1 cup) sugar
  • 3 eggs
  • 150 ml (2/3 cup) sour cream
  • 100 ml (1/2 cup) vegetable oil
  • 10 gr (2 teaspoon) baking powder
  • 5 gr (1 teaspoon) cinnamon powder

  • Add dry ingredients and mix again. Be careful not to overmix the better. Fold in the apples in the dough.
  • Divide the better evenly into lined muffin or cupcake pan, filling 2/3 full.
  • Sprinkle streusel over muffins immediately before baking. 
  • Bake 25-30 min at 350F, or until a toothpick inserted in the center comes out clean. 
  • Let muffins cool in the pan for 5 minutes, then transfer to wire rack and cool to room temperature.
