Instructions
How to Make Streusel
Combine all ingredients in the bowl and mash with a fork or special baking tool (pastry blender).
For
food processor
: Combine all ingredients in the food processor and pulse until crumbly.
For
Thermomix
: combine all ingredients, put the cover on, and knead for 30-40 sec (use the knead function).
Keep in the fridge until use.
How to Make Apple Muffins
Preheat the oven to 350
o
F and line a muffin or cupcake pan with liners.
Wash and dice apples. Peel optional.
In the bowl combine dry ingredients: flour, baking powder, and cinnamon powder. Set aside.
In a separate bowl whisk eggs with sugar until the mixture is fluffy. Add vegetable oil and sour cream and mix until combined.
Add dry ingredients and mix again. Be careful not to overmix the better. Fold the apples in the dough.
Divide the better evenly into a lined muffin or cupcake pan, filling 2/3 full.
Sprinkle streusel over muffins immediately before baking.
Bake for 25-30 min at 350
o
F, or until a toothpick inserted in the center comes out clean.
Let muffins cool in the pan for 5 minutes, then transfer to a wire rack and cool to room temperature.
