A Macaron Christmas Tree is layers of macaron shells and white chocolate ganache. This is not just a macaron; this is like a small cake. You can serve as an individual dessert or decorate your holiday table. Down below, you can find a printable template that you can use to make macaron shells. This way, all trees will be the same size.

How to Make This Recipe
- Download and print the template.
- Bake macaron shells. I used a Basic French Meringue recipe. You can use green food coloring or white, like you see in my picture. I also have an online video lesson on how to make macaron shells using the No Rest method. Check my tips on how to make White Macarons.
- Prepare white chocolate ganache. You can also use buttercream or any other filling like Swiss meringue Buttercream or Salted Caramel.
- Assemble macaron trees.
- Mature macarons in the fridge and enjoy.
How to Make White Chocolate Ganache
Melt white chocolate in the microwave using 30-second intervals. In the small saucepan, bring to a simmer, but do not boil heavy cream. Pour hot cream over the chocolate in 3 parts, mixing with the spatula, fast and pressing down. Emulsify with a hand blender. Transfer the ganache into a flat container and cover it with plastic wrap “to contact”. Let the ganache set in the fridge for 6-8 hours.

How to Assemble
Stack the macaron shells into Christmas Tree towers. Transfer the ganache into a pastry bag with a Wilton 1M piping tip. I used a Pavoni mini dessert tray for each tree. You can also use small plates or cake stands to place the dessert. I recommend piping a small amount of ganache on the tray or plate and then assembling the tree; this way, the tree will not be moved and destroyed. Pipe ganache between each macaron shell and press lightly.
Please note that when you pipe, the ganache is not on the flat side of the macaron shell. Make sure the tree is straight and not moved to one side. It’s easy to fix. Just move the tree with your hand in the right direction. I was taking a video while piping ganache, and one of my trees was moved to the side. You can see that in one of my Instagram reels. But it is easy to fix before macarons mature in the fridge.
When you assemble all the macaron shells, you need to decorate the tree with sprinkles and gold or chocolate chips. The possibilities are endless here; let your imagination work! After that, place the Macaron Christmas Tree into an airtight container to mature in the fridge for 12-24 hours. Use a deep container, or your macarons will not fit. You need to be able to close the cover. For the cream, you can also use Whipped Cream Cheese, which could be assembled right before serving.

Macaron Christmas Tree
Equipment

- 300 gr white chocolate
- 100 ml heavy cream
Macaron Shells
- 125 gr almond flour (1 cup)
- 150 gr powdered sugar (1 1/4 cup)
- 100 gr egg whites room temperature (from 3 large eggs)
- 100 gr white granulated sugar (1/2 cup)

How to Make White Chocolate ganache
- Melt white chocolate in the microwave using 30-second intervals.

How to Make Macaron Shells
- Download and print the template.
- In the mixing bowl, sift together almond flour and powdered sugar. Set aside.
- In the mixing bowl of a stand mixer, add room-temperature egg whites and start whisking on low speed. Start adding sugar one tablespoon at a time. Add food coloring (optional).
- Increase speed to medium-high and whip until glossy and medium peaks. This will take 10-15 minutes.
- Add dry ingredients into the meringue and start folding in the butter. The batter is ready when you can make a figure 8 with a spatula, or it flows “like lava”.
- Transfer macaronage into a pastry bag with a round tip.
- Place the template under the baking mat and pipe macaron shells.
- Top the baking sheet pan with piped macaron shells a few times. Let the shells rest on the countertop until no batter sticks to your finger when you touch it.
- Bake macaron shells in the preheated oven to 275°F (134 °C) -300°F (150oC) for 12-14 minutes. Oven temperature and baking time may vary, depending on your oven.
- Remove baked macaron shells from the oven and let it cool on the baking mat with a baking sheet pan. When shells are cooled completely, remove them from the baking mat and pair them with similar sizes.
