These Blueberry Fritters are made with a cakey batter and fresh blueberries. After picking a lot of blueberries at the farm, I was wondering what I could make with them. The farm was selling blueberry fritters. The line to get these treats was long, and my child was getting impatient. We had to leave, and I promised him to make blueberry fritters at home. Ingredients
- Flour: All-purpose flour.
- Egg: Use eggs at room temperature.
- Sugar: White granulated sugar.
- Milk: Whole milk or fat-free.
- Baking Powder: Do not skip this ingredient.

- Oil: Used for frying vegetable or canola oil.
How to Make This Recipe
In a mixing bowl, combine flour, baking powder, and salt. Set aside. Wash and dry with a paper towel. In another mixing bowl, whisk eggs with sugar until the mixture is fluffy. Stir in the flour mixture. Add warm milk and stir to combine.
Fold blueberries into the dough just until they are covered. Preheat a heavy pot with oil. Once the oil reaches 375oF, you can fry fitters. With the help of an ice cream scoop or spoon, drop balls of batter into the oil. Fritters are ready when they have a darker brown color. Remove fritters into the bowl with granulated sugar and toss around. Let’s cool and enjoy!
Expert Tips
- Don’t overmix the dough. Overmixing dough will make fritters flat and dense.
- Use a candy thermometer to check hot oil. Frying oil should be at 375oF.
- Start to heat the oil after you make the batter. Another way oil will get too hot is you can burn batter.
- Don’t overcrowd the frying oil. Fry no more than 3-4 at a time to get perfect and crispy blueberry fritters.
- Gluten-free flour will also work for this recipe. King Arthur and Bob’s Red Mill both make high-quality flour.
Tip from Marina: Use the back of a wooden spoon to test the heat. Once bubbles start forming, the oil is ready.
