Blueberry Fritters
These Blueberry Fritters are made with a cakey batter and fresh blueberries. After picking a lot of blueberries at the farm, I was wondering what I can make with them. The farm was selling blueberry fritters. Line to get these treats was long and my child was getting inpatient. We had to leave, and I promised him to make blueberry fritters at home. Mommy said, mommy did!

Ingredients you will need
- all-purpose flour
- eggs room temperature
- granulated sugar
- milk
- baking powder
- fresh blueberries
- pinch of salt
- oil, for frying
- granulated sugar for coating
How to make Blueberry Fritters
In a mixing bowl combine flour, baking powder and salt. Set aside.
Wash and dry with paper towel fresh blueberries.
In another mixing bowl, whisk eggs with sugar until the mixture is fluffy. Stir in flour mixture. Add warm milk and stir to combine.
Fold blueberries into the dough, just until are covered.
Preheat a heavy pot with oil. Once the oil reaches 375F you can fry fitters. With the help of ice-cream scoop or spoon, drop balls of batter into oil. Fritters are ready when they have darker brown color.
Remove fritters into the bowl with granulated sugar and toss around. Let cool and enjoy!
Tips for making blueberry fritters
- Don’t overmix the dough. Overmixing dough will make fritters flat and dense.
- Use a candy thermometer to check hot oil. Frying oil should be at 375F.
- Start to heat oil after you make batter. Other way oil will get too hot and you can burn batter.
- Don’t overcrowd the frying oil. Fry no more than 3-4 at the time to get perfect and crispy blueberry fritters.
- Gluten free flour will also work for this recipe. King Arthur or Bob’s Red Mill both make a high-quality flour.
Tip form Marina: Use the back of a wooden spoon to test the heat. Once bubbles start forming, the oil is ready.
How to store Blueberry Fritters
Fritters are best enjoyed on the same day they are made. Store fritters in an air-tight container on the countertop for 2-3 days. You can also freeze fritters in Ziploc bag for up to a month.
