Blueberry Fritters

These Blueberry Fritters are made with a cakey batter and fresh blueberries.

Equipment

  • 1 heavy pot

Ingredients

  • 1 ½ cups all-purpose flour
  • 2 eggs room temperature
  • 3 Tbsp granulated sugar
  • ½ cup milk
  • 1 Tbsp baking powder
  • 2 cups fresh blueberries 
  • pinch of salt
  • oil for frying
  • ½ cup granulated sugar for coating

Instructions

  • In a mixing bowl combine flour, baking powder and salt. Set aside. 
  • Wash and dry with paper towel fresh blueberries. 
  • In another mixing bowl, whisk eggs with sugar until the mixture is fluffy. 
  • Stir in flour mixture. Add warm milk and stir to combine. 
  • Fold blueberries into the dough, just until are covered. 
  • Preheat a heavy pot with oil. Once the oil reaches 375oF you can fry fitters. 
  • With the help of ice-cream scoop or spoon, drop balls of batter into oil. Fritters are ready when they have darker brown color.
  • Remove fritters into the bowl with granulated sugar and toss around. 
  • Let cool and enjoy!
