How to make White Chocolate Ganache

Melt white chocolate in the microwave using 30 seconds intervals. In the small saucepan bring to simmer, but do not boil heavy cream. Pour hot cream over chocolate in 3 parts, mixing with the spatula, fast and pressing down. Emulsify with hand blender. Transfer ganache into flat container and cover with plastic wrap “to contact”. Let ganache set in the fridge for 6-8 hours.

How to assemble Macaron Christmas Tree

Stack the macaron shells into Christmas Tree towers. Transfer ganache into pipping bag with Wilton 1M pipping tip. I used Pavoni mini dessert tray for each tree. You can also use small plates or cake stand to place dessert. I recommend pipping a small amount of ganache on the the tray or plate and then assembling tree, this way the tree will not be moved and destroyed. Pipe ganache between each macarons shell and press lightly.

Please note that you pipe ganache not on the flat side of macaron shell. Make sure tree is straight and not moved to one side. It’s easy to fix. Just move tree with your hand to right direction. I was taking a video while pipping ganache and one of my tree was moved on the side. You can see that in one of my Instagram reels. But it is easy to fix before macarons matured in the fridge.

When you assemble all macaron shells, you need to decorate tree with sprinkles, gold or chocolate chips. The possibilities are really endless here, let your imagination work! After that, place Macaron Christmas Tree into airtight container to mature in the fridge for 12-24 hours. Use deep container or your macaron will not fit. You need to be able to close cover.

For the cream you can also use Whipped Cream Cheese, and could be assembled right before serving.
