Macarons first captured my attention with tantalizing colors: hot pink, light green, velvety brown, golden yellow. They looked like expencive jewels in the pastry shop. It was love from the first bite for me!
It has been four years since I baked my first macarons. Between then and now, I have expirimented with many recipes, designs and technigues, and I can not wait to share them with you! There will be a lot of my secrets and personal tips. Baking macarons became my addiction in the good way.
What is macaron?
Macaron (pronounced mack-a-ROHN) is a sweet meringue-based confection made with egg whites, icing sugar, granulated sugar and almond flour. Two cookies assambled as a sandwich and fillied with ganache, buttercream or jam. Macarons taste better after refrigerating them for 24 hr in airtight container. You can also freeze them for up to 6 months.
Below I am sharing one of my favorite ganaches for macarons. For this recipe is very important to use Valrhona Strawberry Inspiration Chocolate. I would not recommend to change white chocolate eather.
