My Gingerbread Man macarons were a big hit, and I had many requests to post more holiday macarons. How about Snowman Macarons? They could be fun to decorate for kids and adults. To make these Snowman Macarons, I added some texture to the shells, which look like snow. I filled them with white chocolate ganache, but the filling could be any of your favorites. I also made a Snowman template for macarons that you can download and print. Let’s get baking!

How to Make This Recipe

  • Bake macaron shells. For macaron shell recipes, please see our Italian meringue or French meringue recipes.ย I have separate post and video on how to make White Macarons. I also have an online video lesson on how to make macaron shells using the No rest method and low sugar.
  • Prepare white chocolate ganache. You can use any of your favorite to fill macarons.
  • Decorate the macaron shell to look like a snowman. See below how I did with royal icing.
  • Assemble macarons.

After making macaronage, transfer in into a pastry bag with a round piping tip. I like to use Wilton 12. First, you need to pipe one big circle and then a smaller circle on top of it, leaving a little gap between the 2 circles. Circles will connect after banging the tray against the counter.ย For the texture and look like snow, sprinkle the lower part of the snowman with white granulated sugar. Do not worry, sugar will not melt while you bake.

When you bake macarons, make sure the temperature doesnโ€™t go higher than you usually bake, or macarons will turn brown.ย Use over thermometer.

Tip from Marina: I put an empty baking tray on the top rack in my oven and bake macarons on the middle rack.

Let the shells cool before decorating. You can also decorate them after you fill macarons. For decor, you can use royal icing or edible markers. I also used gluten-free pretzel sticks. You have probably seen already many times that I like to use sticks for decor.

How to Make White Chocolate Ganache

Place white chocolate into a plastic bowl or cup. Semi-melt chocolate in the microwave using 30-second intervals. In the small pot heat heavy cream. Do not boil! Pour the hot heavy cream over the melted chocolate in 3 parts. Keep mixing fast and pressing down with the help of a rubber spatula. Emulsify with the hand blender. After that transfer the ganache to a glass container and cover it with the plastic wrap โ€œto contactโ€. Let it set in the refrigerator for 6-8 hours or overnight.

How to Assemble

Transfer the ganache to a pipping bag with a round tip and pipe a generous amount on half the macaron shells. Sandwich them with the decorated macaron shells. You can also add confit or caramel to the center of the ganache. When you are done assembling macarons, you need to place them in an air-tight container in the refrigerator for 12 hours or overnight. Macarons need to mature before you can eat them. This is very important step! Do not skip it!

How to Decorate

  • Use food coloring markers. They are markers that have edible ink and perfect for decorating macarons or any other cookies. 
  • Royal icing is another great way to decorate macarons. Itโ€™s dry hard and will not get damaged when you package macarons. 
  • Melting chocolate wafers are also great for decorating macarons. I like to use Chirardelli.

How to store macarons?

Store filled macarons in an airtight container for 2-3 days in the fridge.

Can I freeze macarons?

Yes, you can freeze macarons. Place macarons in an airtight container and store in the freezer for up to 6 months. Remove them from the freezer and place them in the refrigerator to defrost the day before you plan on eating them.

Are macarons gluten-free?

Yes, macarons are gluten-free cookies because macaron shells are made from almond flour, egg whites, and sugar.

Why are my macarons flat or spread?

This happens if the batter is overtaxed. Check the consistency of the batter very 2-3 folds. The overmixed batter runs off the spatula every fast.

Equipment

Ingredients
  

White Chocolate Ganache

  • 300 gr white chocolate
  • 100 ml heavy cream

Macaron Shells

  • 125 gr almond flour (1 cup)
  • 150 gr powdered sugar (1 1/4 cup)
  • 100 gr egg whites room temperature (from 3 large eggs)
  • 100 gr white granulated sugar 1/2 cup
  • 30 gr white granulated sugar for texture

How to Make Snowman Macaron Shells

  • Download and print template.ย 
  • In the mixing bowl sift together almond flour and powdered sugar. Set aside.ย 
  • In the mixing bowl of stand mixer add room temperature egg whites and start whisking on low speed. Start adding sugar one tablespoon at a time.ย ย Add white food coloring. Increase speed to medium-high and whip until stiff picks. This will take 10-15 minutes.ย 
  • Add dry ingredients and start folding the butter. When macaronage drips down from the spatula โ€œlike lavaโ€, transfer it into a pipping bag with a round tip.ย 
  • Pipe snowman-shaped macaron shells on the baking mat.ย 
  • Top baking sheet pan with pipped macaron shells a few times.
  • Sprinkle the lower part of the snowman with white granulated sugar.
  • Let shells rest on the countertop until no batter sticks to your finger when you touch it.ย 
  • Bake macaron shells in the preheated oven to 275oF (134oC) for 12-14 minutes. Oven temperature and baking time may vary, depending on your oven.ย 
  • Remove baked macaron shells from the oven and let them cool on the baking mat with a baking sheet pan. When shells are cooled completely remove them from the baking mat and pair them with similar size.ย
