Hot Chocolate Bombs are chocolate spheres that, when you drop them into warm milk, will melt and release hot cocoa and marshmallows hiding inside. My son asked me to make these bombs, and I am sharing them with you.

How to Make This Recipe
First, you need to temper the chocolate. Using a microwave-safe container (not glass), melt about 2/3 of the chocolate in the microwave. When the chocolate starts to melt, stir with a spatula occasionally until the chocolate is about 90% melted. Add the remaining chocolate a little at a time, allowing it to melt completely before adding more chocolate. Stir with a spatula until all the chocolate is melted and not hot to the touch.
You can also melt chocolate using the double-boiler method, where steam from the water melts the chocolate. For this method, you need to add chocolate to a large heatproof bowl (not glass) and place the bowl over the pot with water. Make sure the bowl is large enough to sit on the rim of the pot and not touch the water. Then, the process is the same: when the chocolate is almost melted, you need to add more chocolate and stir with a spatula.

How to Fill Molds
When you have the chocolate ready, you can continue with the next step. Fill each of the cavities of the silicon mold with chocolate about halfway. Using a spoon, spread the chocolate to the top of each cavity. After that, using both hands, pick up the mold and tilt the mold back over the bowl of melted chocolate to shake out any excess. Then, place the mold in the fridge to set for 10-15 minutes. Repeat with other molds. I recommend using 2-inch or smaller silicone molds. This size will fit perfectly in a standard mug. I like to use different sizes and different chocolate to make Hot Chocolate Bombs.

Remove the molds from the fridge and carefully unmold half the spheres. Heat a large pan until it gets warm, but not too hot. After that, slightly melt the rim of the chocolate spheres in the warm pan. Do not melt all spheres, just half of them. Place the melted spheres open side up and fill them with hot cocoa mix and mini marshmallows. Then, melt the rim of the remaining half and seal the Hot Cocoa Bombs with another warmed half sphere. Using a spoon, drizzle some of the chocolate back and forth over the bombs to decorate and top with sprinkles or marshmallows. Let the bombs sit at room temperature for 20-30 minutes or until completely set.

Expert Tips
- Use good-quality chocolate. This is the main ingredient.
- Temper the chocolate. Do not skip this step! Tempered chocolate will not melt in your hands and will have a glossy finish.
- Do not overfill spheres with the filling, or it will be hard to close them.
- Make spheres ahead of time and fill them later. They are perfect for the busy holiday season.
