Instructions
How to Make Cranberry Orange Muffins
Wash and dry cranberries.
Line a muffin/cupcake tin with cupcake liners.
Preheat oven to 375°F.
In a large mixing bowl, beat together two eggs and granulated sugar. It should be thick and light in color.
Add sour cream, vegetable oil, and orange juice. Mix to combine.
In a small bowl, add all-purpose flour, baking powder, and a pinch of salt. Wisk to combine.
Using a handheld whisk, add the flour mixture to the batter. Very important here not to overmix.
Add the zest of one orange.
Use a spatula to fold in cranberries.
Divide batter into muffin tin filling liners. Use an ice cream spoon if needed.
Bake at 375°F for 20 min or until tops are golden. Remove the muffins from the tin and let them cool on the wire rack. Top muffins with orange glaze.
How to Make Orange Glaze
Combine powdered sugar with orange juice and mix well.
Add orange zest.
Top muffins with orange glaze.
Notes
Get all ingredients and tools ready before baking.
Measure all ingredients using a kitchen scale.
Do not overbake muffins.
