In a mixing bowl combine flour, baking powder and salt. Set aside.
Wash and dry with paper towel fresh blueberries.
In another mixing bowl, whisk eggs with sugar until the mixture is fluffy.
Stir in flour mixture. Add warm milk and stir to combine.
Fold blueberries into the dough, just until are covered.
Preheat a heavy pot with oil. Once the oil reaches 375oF you can fry fitters.
With the help of ice-cream scoop or spoon, drop balls of batter into oil. Fritters are ready when they have darker brown color.
Remove fritters into the bowl with granulated sugar and toss around.
Let cool and enjoy!
Notes
Don’t overmix the dough. Overmixing dough will make fritters flat and dense.Start to heat the oil after you make the batter. Another way oil will get too hot and you can burn batter.Don’t overcrowd the frying oil. Fry no more than 3-4 at a time to get perfect and crispy blueberry fritters.
