Place the sugar in a heavy-bottomed saucepan over medium heat in two or three parts. Sugar will start to melt. Then, add another part of the sugar to the sides of the saucepan. Move the saucepan every few minutes to keep the sugar heating evenly, but do not stir with the spatula.
Meanwhile, in another small saucepan, warm up heavy cream, but do not boil!
When all the sugar has melted, remove the saucepan from the heat. Add warm heavy cream to the melted sugar and stir to combine with the spatula. The mixture will begin to bubble. Please be careful!
Add butter and stir until completely combined. Add sea salt flakes or Fleur De Sea and stir again.
Transfer caramel into a flat container and cover it with the plastic wrap "to contact." You can also store it in a glass jar.
