One dough Holiday cookie box

One dough makes many diffrent cookies.

Equipment

  • 1 stand mixer or electric hand mixer

Ingredients

The main dough

  • 8 sticks unsalted butter ( 905gr) room temperature
  • 2 eggs
  • 1 egg yolk
  • 1060 gr all-purpose flour
  • 350 gr powdered sugar

Pistachio cookies

  • 1 part main dough
  • 60 gr pistachio flour or grain pistachio
  • 40 gr all-purpose flour

Hazelnut cookies

  • 1 part main dough
  • 40 gr hazelnut flour or grain hazelnuts
  • 40 gr all-purpose flour

Chocolate cookie

  • 1 part main dough
  • 40 gr Valrhona cocoa powder
  • 20 gr powdered sugar

Lemon cookies

  • 1 part main dough
  • 40 gr all-purpose flour
  • zest of one lemon

Linzer cookies

  • 1 part main dough
  • 70 gr almond flour
  • 40 gr all-purpose flour

Coconut cookies

  • 1 part main dough
  • 40 gr all-purpose flour
  • 10 gr shredded coconut unsweetened

Instructions

  • In a mixing bowl beat softened butter until light and fluffy.
  • Slowly mix in powdered sugar. 
  • Add eggs in 2-3 times, mix well after each addition. 
  • Add all-purpose flour.
  • Mix well until combine. 
  • Divide dough into 6 parts (about 390 gr- 400 gr each part) 
  • Add extra ingridients to each part of main dough.
  • Roll dough between 2 parchment papers and let cool in the fridge for 30-40 min (or overnight).
  • Use cookies cutters to cut out your favorite shapes.
  • Put the cutout cookies on the baking tray and keep in fridge for 15-20 min before baking.
  • Bake at 350F for 7-8 min.
  • Decorate and pack into boxes.
