Apple Muffins with Streusel

Apple muffins topped with streusel make perfect holiday dessert or kid friendly snack.

Equipment

  • 1 Food processor or Thermomix
  • 1 stand mixer or electric hand mixer

Ingredients

Streusel

  • 50 gr (1/4 cup) sugar
  • 50 gr (1/3 cup) all-purpose flour
  • 50 gr (3 Tablespoon +2 teaspoon) unsalted butter cold

Apple muffins

  • 3 big apples
  • 350 gr (2 3/4 cup) all-purpose flour
  • 180 gr (1 cup) sugar
  • 3 eggs
  • 150 ml (2/3 cup) sour cream
  • 100 ml (1/2 cup) vegetable oil
  • 10 gr (2 teaspoon) baking powder
  • 5 gr (1 teaspoon) cinnamon powder

How to make Streusel

  • Combine all ingredients together in the bowl and mash with fork or special baking tool (pastry blender).

  • For food processor: Combine all ingredients in the food processor and pulse until crumbly. 
  • For Thermomix: combine all ingredients, put cover on and knead for 30-40 sec (use knead function).
  • Keep in the fridge until use. 

How to make Apple Muffins

  • Preheat the oven to 350F and line a muffin or cupcake pan with liners.
  • Wash and dice apples. Peel optional.
  • In the bowl combine dry ingredients: flour, baking powder and cinnamon powder. Set aside. 
  • In the separate bowl whisk eggs with sugar until mixture is fluffy. Add vegetable oil and sour cream and mix until combine. 
  • Add dry ingredients and mix again. Be careful not to overmix the better. Fold in the apples in the dough.
  • Divide the better evenly into lined muffin or cupcake pan, filling 2/3 full.
  • Sprinkle streusel over muffins immediately before baking. 
  • Bake 25-30 min at 350F, or until a toothpick inserted in the center comes out clean. 
  • Let muffins cool in the pan for 5 minutes, then transfer to wire rack and cool to room temperature.
